ascorbic acid (Vitamin C)

Ascorbic acid (Vitamin C) is an essential nutrient found in fruit juices and used as a vitamin supplement in food. It is most often measured using colorimetry and HPLC.

ascorbic acid (Vitamin C): CAS No. 50-81-7, C6H8O6, molecular weight 176.12, melting point 190-192°C, density 1.65gm/mL, vapor pressure 0.00mm Hg at 25°C, non flammable, water soluble is a white crystalline solid. It is an essential nutrient available in fruits and fruit juices like orange juice and in certain vegetables like broccoli. It is commercially produced from glucose and in addition to its use as a vitamin supplement in food, it is used as an antioxidant in foodstuffs, to prevent browning of cut apples and other fruit and as a reducing agent in analytical chemistry. It is most frequently measured in food, plasma and urine using fluorometric and colorimetric methods as well as by reversed phase HPLC
